Brief Overview
Gum Arabic is a polysaccharide that is found in many foods as an emulsifier, stabilizer, thickener, and flavor enhancer. This substance can be found in desserts like low-fat ice cream and sugar-free candies. In addition, gum Arabic also helps to provide a smooth texture, provide body and mouthfeel, as well as keep nutrition and other components in the product from separating.
Manufacturing Process
The manufacturing process involved several steps. The first step was removal of impurities and hydrolysis. The hydrolyzed gum Arabic was then clarified and decolorized for 24 hours. the second step was to centrifuge the mixture to remove the impurities and to obtain the clear liquid. The last step was to spray drying to get a fine particle and the solid was cooled in water cooler to be packed.
Food Industry
Gum arabic in food industry has many applications. Gum arabic can be an emulsifier that help binding water and oil to blend into smooth homogeneous solution. It can also be used as a stabilizer to give a smooth texture in a product and keep nutrients stay in the product. Gum arabic can also be used as a thickener to increase the viscosity of liquid product without altering other qualities.
