Potassium tripolyphosphate (KTPP) is a hygroscopic white material, granular, soluble in water, and produces a moderately alkaline solution. Potassium tripolyphosphate is a chelating agent (high quality calcium, magnesium and iron chelators in foods). Potassium tripolyphosphate is highly soluble in aqueous solution and has excellent dispersion properties. Potassium tripolyphosphate is readily soluble in water and has a solubility of 178 g, 194 g and 212 g respectively, and is dissolved in 100 mL of water at 10°C, 25°C and 50°C, respectively. Potassium tripolyphosphate has good chelating ability, can form stable chelate with Ca2+, and Mg2+ in hard water to soften hard water, increase cleaning ability and remove dirt. A white precipitate formed by adding 13 mL of a 1% calcium nitrate solution to 100 mL of a 1% solution of potassium pyrophosphate quickly chelates to give a clear appearance.
