Brief Overview
Desiccated coconut is coconut meat which has been shredded or flaked and then dried to remove as much moisture as possible. It is crisp, snow white in color and has a sweet, pleasant and fresh taste of the nut. It is made from fresh coconuts which are harvested at just the right time to ensure the best flavor. Desiccated coconuts are graded by its cutting size, for example, fine grade and medium grade where the fine grade is smaller particle size than the medium grade. A good quality desiccated coconut should be white in color, reasonably free from yellow specks, black spots and other discoloration. It should have a sweet aroma of coconut, mild characteristics of coconut without rancid and even particle size distribution.
Manufacturing process
Desiccated coconut is a coconut product that is prepared and preserved by removing the natural moisture in the coconut fruit. It usually contains about 3% of moisture, and is produced from the white part of fresh, mature coconut kernel. The white part is shredded into desirable sizes such as flakes, granules, chips or shreds. Then it is dried in hot air of 50 - 55 ℃. It is available in toasted, sweetened or sweetened toasted forms. It also comes in two variations such as low fat that has a maximum of 50% fat and high fat that has a minimum of 60% fat.

Desiccated coconut is used as fillers, toppings and as ingredients, especially in the baking of biscuits, snack bars, cakes, cookies, etc. It is used in many baked products and cereal or granola applications. It is used in sweetened form as decorative cake topping and as batter for baked or fried seafood.
