Potassium lactate is a liquid product that has an E number of “E326". It is the potassium salt of lactic acid, and usually consists of 60% solids. Potassium Lactate blends are commonly used in the food industry, especially in meat and poultry products to extend shelf life and increase food safety.
It is produced by neutralizing lactic acid which is fermented from a sugar source.
Potassium lactate is used in meat and poultry products to retain the freshness of meat products. It also serves as an antioxidant synergistic agent which restrains pathogens in food production and extend the shelf life of food. Used as a food flavoring agent, emulsifier, pH regulator, flavoring.
It is used as an extinguishing media in the First Alert Tundra fire extinguishers.
